Baking: Thyme Biscuits

These are a perfect snack for the afternoon; served with cheese, chutney and a little bit of salad - yum!

• 100g Plain Flour
• 50g Butter
• 1tsp Salt
• 1tbsp Thyme

• Mix together all ingredients in a bowl and add a few tablespoons of cold water to make the dough smooth.
• Wrap the dough in foil and put in the fridge for 30 minutes.
• Preheat the oven to 180°c.
• Roll out the dough on a floured surface to around 5mm thick. A trick I learnt recently is to use a sheet of baking paper on the worktop with a light dusting of flour; this makes working with gluten free dough so much easier.
• Use cutters or a stamp to cut out your biscuits, then place on a baking tray lined with baking paper.
• Bake for 20-25 minutes.
