strawberries & cream cupcakes

i know, i know, these aren't very autumnal. but during the crazy heat of last week, these seemed like the perfect dessert, and they went down so well!

125g self-raising flour
125g butter
125g sugar
2 eggs
pinch of salt
strawberry jam
double or whipped cream

makes 12 cupcakes.

preheat oven to 180c. cream the butter and sugar together.

 add the flour, eggs and pinch of salt. mix well.

place tablespoon sized dollops into cupcake cases and bake for 15 minutes. 
whilst they're baking, whip up the double cream and slice 6 strawberries for the toppings.

once the cupcakes have baked and cooled down, use a knife to carve out 2p sized pieces of the sponge as below.

fill the hole with a teaspoon of jam, and then replace the sponge 'lid'.

finally, place dollops of cream on top to cover up the lids, and top with a sliced strawberry.
