apple, cinnamon & raisin cake

i haven't posted up a recipe in what feels like forever.
actually, i think it's since moving house, but after making this amazing autumnal cake last night, i'm hoping to pick it up again.

2 cups finely diced apples (i peeled mine, but you can have them either way)
1 cup sugar
1 egg
1/4 vegetable oil (i used olive because i didn't have any vegetable..shh!)
1 tsp baking powder
2 tsp cinnamon
1/2 cup raisins
1/4 tsp salt
1 cup flour (gluten free of course :p)

just to prove how long it's been since i posted a recipe, i forgot to take step-by-step photos, but it's really easy so this shouldn't matter.

preheat oven to 180c.
into a mixing bowl, add the diced apples and sugar and leave to stand for 15 minutes. they will caramelise together and look a little bit like apple sauce!

add the oil and egg and mix in. 
add all of the dry ingredients and mix together. 

pour into an 8" greased tin and bake for 45 minutes. 

and voila! amazingly good cake that is perfect for the autumn evenings that are creeping in.
